I am participating in a contest called the Healthy Greek Eats Challenge. Over the course of 3 weeks, we are supposed to make unique dishes utilizing their hummus, tzatziki and Greek yogurt over a three week period. Now, I’m not much of a cook, but I thought this would be a fun challenge. For week one, we are to create dish utilizing hummus so I decided to make an appetizer with flatbread, tomatoes, olive oil, balsamic vinegar, black pepper and blue cheese crumbs.
Ingredients
2 pieces | Whole Wheat Flatbread |
1/2 cup | HGE hummus |
4 | Plum Tomatoes |
2 tbsps | Extra virgin olive oil |
2 tbsps | Balsamic vinegar |
2 tbsps | Blue cheese crumbles |
Pepper to tasts |
Directions
- Preheat over to 450 degrees
- Cut tomatoes in half lengthwise
- Core and seed tomatoes
- Arrange tomatoes on baking sheet in single layer
- Drizzle with olive oil and balsamic vinegar
- Season with pepper
- Cook for 25 – 30 minutes, until tomatoes begin to caramelize
- While tomatoes are cooking, toast flatbread
- Spread approximately 1 tablespoon of HGE hummus on each
- Once the tomatoes are caramelized, place them on hummus
- Season with pepper
- Add blue cheese crumbles
- Cut into quarters and serve
