Healthy Greek Eats Challenge

I am participating in a contest called the Healthy Greek Eats Challenge.  Over the course of 3 weeks, we are supposed to make unique dishes utilizing their hummus, tzatziki and Greek yogurt over a three week period.  Now, I’m not much of a cook, but I thought this would be a fun challenge.  For week one, we are to create dish utilizing hummus so I decided to make an appetizer with flatbread, tomatoes, olive oil, balsamic vinegar, black pepper and blue cheese crumbs.

Ingredients

2 pieces Whole Wheat Flatbread
1/2 cup HGE hummus
4 Plum Tomatoes
2 tbsps Extra virgin olive oil
2 tbsps Balsamic vinegar
2 tbsps Blue cheese crumbles
Pepper to tasts

Healthy Greek Eats Challenge

Directions

  • Preheat over to 450 degrees
  • Cut tomatoes in half lengthwise
  • Core and seed tomatoes
  • Arrange tomatoes on baking sheet in single layer
  • Drizzle with olive oil and balsamic vinegar
  • Season with pepper
  • Cook for 25 – 30 minutes, until tomatoes begin to caramelize
  • While tomatoes are cooking, toast flatbread
  • Spread approximately 1 tablespoon of HGE hummus on each
  • Once the tomatoes are caramelized, place them on hummus
  • Season with pepper
  • Add blue cheese crumbles
  • Cut into quarters and serve
